TO save native British freshwater fish from extinction, eat zander, says British Waterways. It fears that zander, a carnivorous game fish introduced to Britain 20 years ago, could otherwise wipe out native species. Zander culls have failed (This Week, 23/30 December 1995). Now, British Waterways is urging people to eat zander caught by anglers. “Its meat is firm, white and has a stronger flavour than cod,” says Jonathan Briggs of British Waterways.
